Cross Niigata × Vietnam

Cross Niigata × Vietnam is a cultural exchange project connecting the food traditions, craftsmanship, and people of Niigata and Vietnam.

A shared respect for local culture

I initiated the project together with Sho Suzuki, a chef working with fermentation and culture and the founder of Suzu Group. His philosophy, “Think Local. Feel Local.”, reflects a deep respect for regional identity, sustainability, and traditional craftsmanship, including Niigata’s fermentation culture and miso-making heritage.

I bring a perspective shaped by my life in Vietnam. Through Vietnamese ingredients, local craftsmanship, and Japanese culinary techniques, we explore a dialogue between the two cultures.
